I think it would be a stretch to have your 2nd graders understand your research! But definitely have your audience be parents/adults/teachers. I liked the advice I read about this week in my articles: Use lots of graphs to convey information, and don't try to quote or state any statistical analysis results. (cause most people wouldn't understand it.) I like your prezi idea, or educational video. It's not all about the written word, is it?! :-)

I have read a little about what your Seesaw project is about and I think that you can give your students some insight as to what your end goal is. However, for the big picture, I agree with Gerald that a more high level view will be sufficient.

I like that format. I would suggest writing it up first, then do the Prezi or other method. It will give you the information you want to use for your report in an organized way.

Hmmmmm.! Great idea on disseminating your information using a Prezi and I think this will be a great way to present to your colleagues. Having this already done would be great if you are ever asked to present in an Inservice, professional development, or a conference. Great idea!
